- When making candy, If a recipe calls for a candy thermometer it’s very important to use one
- When your candy recipes are chocolate-based you don’t always need to temper your chocolate unless it is called for in the recipe
- Take care not to over mix chocolate when making truffles or fudge. It can separate and become oily
